Mashed Cauliflower

Mashed Cauliflower

Ingredients

  • One head organic cauliflower
  • 4 oz. cream cheese
  • Salt and pepper to taste
  • 1 TBS butter

Directions

  • Cut cauliflower into flowerettes
  • Put in steamer basket
  • Fill a large pot with water up to the basket
  • Turn on high and steam until cauliflower is fork tender
  • Pull out the steamer basket and pour out the water
  • Put the cauliflower back in the warm pot with the rest of the ingredients
  • Blend with an emersion blender until mashed potato consistency
