Ingredients
- 1 package of fresh baby spinach
- 1/2 pound fresh mushrooms (button or baby bella work great)
- 1 small fresh garlic clove (optional)
- 1 TBS olive oil or real butter
Directions
- Brush mushrooms clean (washing them will make them soggy so I just use a soft brush that is actually shaped like a mushroom) then slice
- Chop garlic
- Heat a skillet (10" works well) and then add olive oil/butter
- Saute mushrooms and garlic for about 1/2 min.
- Add spinach and stir a couple of times
- Remove when spinach is just wilted
